- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 tsp salt
- 1 cup apple cider
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- Preheat the oven to 350°F (175°C). Grease a 9-inch cake pan.
- Whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt in a bowl.
- Simmer apple cider in a saucepan until reduced to 1/2 cup. Cool.
- Cream butter and sugar until fluffy. Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients and buttermilk to the butter mixture. Mix in reduced cider.
- Pour batter into the pan. Bake for 30-35 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
