Delicious apple cider muffins with warm spices and a tender crumb.

Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1/2 cup apple cider
  • 1 tsp vanilla extract
  • 1 cup diced apples

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  3. In another bowl, cream butter and sugar until fluffy. Beat in eggs one at a time.
  4. Stir in apple cider and vanilla.
  5. Fold dry ingredients into wet ingredients. Do not overmix.
  6. Gently fold in diced apples.
  7. Divide batter evenly into muffin cups.
  8. Bake for 18-22 minutes or until a toothpick comes out clean.
  9. Let cool before serving.
