- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1/2 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 2 eggs
- 1/2 cup apple cider
- 1 tsp vanilla extract
- 1 cup diced apples
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a bowl, mix flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- In another bowl, cream butter and sugar until fluffy. Beat in eggs one at a time.
- Stir in apple cider and vanilla.
- Fold dry ingredients into wet ingredients. Do not overmix.
- Gently fold in diced apples.
- Divide batter evenly into muffin cups.
- Bake for 18-22 minutes or until a toothpick comes out clean.
- Let cool before serving.
