Sweet and tender carrots glazed with a simple apple juice reduction for a flavorful side dish.

Ingredients

  • 1 lb carrots, peeled and sliced
  • 1 cup apple juice
  • 2 tbsp butter
  • 1 tbsp honey
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. In a saucepan, melt butter over medium heat.
  2. Add carrots and sauté for 5 minutes.
  3. Pour in apple juice and honey.
  4. Bring to a simmer and cook for 15-20 minutes until carrots are tender and liquid reduces to a glaze.
  5. Season with salt and pepper.
  6. Serve warm.
