Ingredients

  • 2 cups water
  • 1 apple, diced
  • 1/2 cup pecans, chopped
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp fresh thyme

Instructions

  1. Rinse wild rice under cold water.
  2. Combine rice and water in a pot. Bring to a boil.
  3. Reduce heat, cover, and simmer for 45 minutes.
  4. Heat olive oil in a pan. Sauté onion until soft.
  5. Add diced apple and pecans. Cook for 3 minutes.
  6. Mix cooked rice with apple-pecan mixture.
  7. Season with salt, pepper, and thyme.
