  • 2 eggs, beaten
  • Cooking spray

Instructions

  1. Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Cut zucchinis into fry-shaped pieces.
  3. In a bowl, mix breadcrumbs, Parmesan, garlic powder, paprika, salt, and pepper.
  4. Dip zucchini fries in beaten eggs, then coat with breadcrumb mixture.
  5. Place fries on the baking sheet in a single layer. Lightly spray with cooking spray.
  6. Bake for 20-25 minutes, flipping halfway, until golden and crispy.
