A hearty and flavorful barley mushroom pilaf that’s perfect as a side dish or a vegetarian main course.

Ingredients

  • 1 cup barley
  • 2 cups vegetable broth
  • 1 tbsp olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Rinse barley under cold water and drain.
  2. Heat olive oil in a pot over medium heat.
  3. Add onion and garlic, sauté until softened.
  4. Add mushrooms and cook until browned.
  5. Stir in barley, thyme, salt, and pepper.
  6. Pour in vegetable broth and bring to a boil.
  7. Reduce heat, cover, and simmer for 30-40 minutes until barley is tender.
  8. Fluff with a fork before serving.
