- 2 lbs beef chuck, cubed
- 1 tbsp vegetable oil
- 1 onion, chopped
- 4 garlic cloves, minced
- 2 chipotle peppers in adobo, chopped
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- 1 tsp salt
- 1/2 tsp black pepper
- 2 cups beef broth
- 1 bay leaf
- 2 tbsp apple cider vinegar
- Heat oil in a pot over medium-high heat.
- Brown the beef on all sides, then remove.
- Add onion and garlic to the pot, cook until soft.
- Stir in chipotle peppers, cumin, oregano, salt, and pepper.
- Return beef to the pot, add broth, bay leaf, and vinegar.
- Bring to a boil, then reduce heat and simmer for 2.5 hours.
- Remove bay leaf before serving.
