Ingredients

  • 2 lbs beef chuck, cubed
  • 1 tbsp vegetable oil
  • 1 onion, chopped
  • 4 garlic cloves, minced
  • 2 chipotle peppers in adobo, chopped
  • 1 tbsp ground cumin
  • 1 tbsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 cups beef broth
  • 1 bay leaf
  • 2 tbsp apple cider vinegar

Instructions

  1. Heat oil in a pot over medium-high heat.
  2. Brown the beef on all sides, then remove.
  3. Add onion and garlic to the pot, cook until soft.
  4. Stir in chipotle peppers, cumin, oregano, salt, and pepper.
  5. Return beef to the pot, add broth, bay leaf, and vinegar.
  6. Bring to a boil, then reduce heat and simmer for 2.5 hours.
  7. Remove bay leaf before serving.

Notes

  • Use shredded beef for tacos if preferred.
  • Adjust chipotle peppers for more or less heat.
