- 1 lb ground beef
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp cumin
- 1 tsp chili powder
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 4 large flour tortillas
- 1/2 cup diced onions
- 1/2 cup diced bell peppers
- 1/4 cup chopped cilantro
- Heat olive oil in a pan over medium heat.
- Add onions and bell peppers, cook until softened.
- Add ground beef, salt, pepper, cumin, and chili powder. Cook until beef is browned.
- Place a tortilla in a clean pan over medium heat.
- Sprinkle cheese on half of the tortilla.
- Add cooked beef mixture on top of the cheese.
- Fold the tortilla in half and press lightly.
- Cook for 2-3 minutes on each side until golden brown.
- Repeat with remaining tortillas.
- Slice into wedges and serve.
