A hearty and flavorful chili combining black beans and pumpkin for a unique twist.

Ingredients

  • 2 cups black beans, cooked
  • 1 cup pumpkin puree
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 can diced tomatoes
  • 2 cups vegetable broth

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic, sauté until softened.
  3. Stir in chili powder, cumin, smoked paprika, salt, and black pepper.
  4. Add black beans, pumpkin puree, diced tomatoes, and vegetable broth.
  5. Bring to a boil, then reduce heat and simmer for 25-30 minutes.
  6. Serve hot with your favorite toppings.

Notes

  • For extra heat, add a pinch of cayenne pepper.
