- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 3/4 cup brown sugar
- 2 eggs
- 3 ripe bananas, mashed
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, whisk flour, baking soda, and salt.
- In another bowl, cream butter and sugar. Add eggs, mashed bananas, and vanilla.
- Gradually mix dry ingredients into wet ingredients.
- Fold in blueberries gently.
- Pour batter into loaf pan. Bake for 50-60 minutes until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack.
Notes
- Use very ripe bananas for best flavor.
