  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup brown sugar
  • 2 eggs
  • 3 ripe bananas, mashed
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
  2. In a bowl, whisk flour, baking soda, and salt.
  3. In another bowl, cream butter and sugar. Add eggs, mashed bananas, and vanilla.
  4. Gradually mix dry ingredients into wet ingredients.
  5. Fold in blueberries gently.
  6. Pour batter into loaf pan. Bake for 50-60 minutes until a toothpick comes out clean.
  7. Cool in pan for 10 minutes, then transfer to a wire rack.

Notes

  • Use very ripe bananas for best flavor.
  • Toss blueberries in flour to prevent sinking.
