1 cup rolled oats
1/2 cup whole wheat flour
1/4 cup honey
1/4 cup mashed banana
1/4 cup almond butter
1/2 cup fresh or frozen blueberries
1 tsp vanilla extract
1/2 tsp cinnamon
1/4 tsp baking soda
1/8 tsp salt
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, mix oats, flour, cinnamon, baking soda, and salt.
In another bowl, combine honey, mashed banana, almond butter, and vanilla extract.
Add wet ingredients to dry ingredients and mix until well combined.
Gently fold in blueberries.
Scoop tablespoon-sized portions of dough onto the baking sheet.
Flatten slightly with your fingers or a spoon.
Bake for 12-15 minutes until edges are golden.
Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Store in an airtight container for up to 5 days.
You can substitute almond butter with peanut butter.
For vegan version, replace honey with maple syrup.
Frozen blueberries work well – don’t thaw before using.
