These blueberry oat muffins are a healthy and delicious breakfast or snack option. They are packed with fresh blueberries and the goodness of oats.

Ingredients

  • 1 cup rolled oats
  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 cup fresh blueberries

Instructions

  1. Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
  2. In a large bowl, mix oats, flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk egg, milk, oil, and vanilla.
  4. Combine wet and dry ingredients. Fold in blueberries.
  5. Spoon batter into muffin cups, filling each 3/4 full.
  6. Bake for 20-25 minutes until golden brown.
  7. Let cool for 5 minutes before serving.

Notes

  • You can use frozen blueberries if fresh aren’t available
  • For extra texture, sprinkle some oats on top before baking
  • Store leftovers in an airtight container for up to 3 days
