- 1 cup rolled oats
- 1 cup whole wheat flour
- 1/2 cup sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1 egg
- 1/2 cup milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1 cup fresh blueberries
- Preheat oven to 375°F (190°C). Line a muffin tin with paper liners.
- In a large bowl, mix oats, flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk egg, milk, oil, and vanilla.
- Combine wet and dry ingredients. Fold in blueberries.
- Spoon batter into muffin cups, filling each 3/4 full.
- Bake for 20-25 minutes until golden brown.
- Let cool for 5 minutes before serving.
Notes
- You can use frozen blueberries if fresh aren’t available
