A fresh and light dish featuring zucchini boats filled with classic Caprese ingredients.

Ingredients

  • 4 medium zucchinis
  • 1 cup cherry tomatoes, halved
  • 1 cup fresh mozzarella, diced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic glaze
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut zucchinis in half lengthwise and scoop out the centers.
  3. Brush zucchini halves with olive oil and season with salt and pepper.
  4. Bake for 15 minutes until slightly tender.
  5. Remove from oven and fill with cherry tomatoes, mozzarella, and basil.
  6. Return to oven for 5-7 minutes until cheese melts.
  7. Drizzle with balsamic glaze before serving.

Notes

  • Use ripe cherry tomatoes for the best flavor.
  • Substitute fresh mozzarella with shredded mozzarella if needed.
  • Add a sprinkle of red pepper flakes for extra heat.
