- 4 medium zucchinis
- 1 cup cherry tomatoes, halved
- 1 cup fresh mozzarella, diced
- 1/4 cup fresh basil, chopped
- 2 tbsp olive oil
- 1 tbsp balsamic glaze
- Salt and pepper to taste
- Preheat oven to 375°F (190°C).
- Cut zucchinis in half lengthwise and scoop out the centers.
- Brush zucchini halves with olive oil and season with salt and pepper.
- Bake for 15 minutes until slightly tender.
- Remove from oven and fill with cherry tomatoes, mozzarella, and basil.
- Return to oven for 5-7 minutes until cheese melts.
- Drizzle with balsamic glaze before serving.
Notes
- Use ripe cherry tomatoes for the best flavor.
- Substitute fresh mozzarella with shredded mozzarella if needed.
- Add a sprinkle of red pepper flakes for extra heat.
