- 1 medium cauliflower, cut into florets
- 2 medium sweet potatoes, peeled and cubed
- 2 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1/2 cup grated cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup heavy cream
- 1 tbsp chopped parsley (optional)
- Preheat oven to 400°F (200°C).
- Toss cauliflower and sweet potatoes with olive oil, salt, pepper, garlic powder, and paprika.
- Spread on a baking sheet and roast for 25 minutes.
- Transfer to a baking dish. Pour heavy cream over the top.
- Sprinkle cheddar and Parmesan cheese evenly.
- Bake for 15 minutes until cheese is golden and bubbly.
- Garnish with parsley if desired. Serve warm.
