- 1 medium cauliflower, cut into florets
- 1 can (15 oz) chickpeas, drained and rinsed
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 can (14 oz) diced tomatoes
- 1 can (14 oz) coconut milk
- 2 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1 tsp coriander
- 1 tbsp olive oil
- Salt to taste
- Fresh cilantro for garnish
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, and ginger. Sauté until soft.
- Stir in curry powder, turmeric, cumin, and coriander. Cook for 1 minute.
- Add diced tomatoes and simmer for 5 minutes.
- Add cauliflower florets and chickpeas. Stir to coat with the sauce.
- Pour in coconut milk and bring to a gentle simmer.
- Cover and cook for 15-20 minutes until cauliflower is tender.
- Season with salt to taste.
- Garnish with fresh cilantro before serving.
