A flavorful and hearty cauliflower chickpea curry that’s easy to make and packed with nutrients.

  • 1 medium cauliflower, cut into florets
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 can (14 oz) diced tomatoes
  • 1 can (14 oz) coconut milk
  • 2 tbsp curry powder
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tbsp olive oil
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, and ginger. Sauté until soft.
  3. Stir in curry powder, turmeric, cumin, and coriander. Cook for 1 minute.
  4. Add diced tomatoes and simmer for 5 minutes.
  5. Add cauliflower florets and chickpeas. Stir to coat with the sauce.
  6. Pour in coconut milk and bring to a gentle simmer.
  7. Cover and cook for 15-20 minutes until cauliflower is tender.
  8. Season with salt to taste.
  9. Garnish with fresh cilantro before serving.
