- 1 small pumpkin (about 2 cups, peeled and sliced)
- 2 large potatoes (peeled and thinly sliced)
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic (minced)
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- 1 tbsp butter (for greasing)
- Preheat your oven to 375°F (190°C). Grease a baking dish with butter.
- Layer the pumpkin and potato slices alternately in the dish.
- In a bowl, mix heavy cream, minced garlic, salt, pepper, and thyme. Pour over the layered vegetables.
- Sprinkle cheddar and Parmesan cheese evenly on top.
- Cover with foil and bake for 40 minutes.
- Remove the foil and bake for another 15 minutes until golden and bubbly.
- Let it rest for 5 minutes before serving.
