- 2 1/2 cups all-purpose flour
- 1 teaspoon salt
- 1 cup unsalted butter, chilled and cubed
- 6–8 tablespoons ice water
- 5 cups fresh or frozen cherries, pitted
- 1 cup granulated sugar
- 1/4 cup cornstarch
- 1 tablespoon lemon juice
- 1/2 teaspoon almond extract
- 1 egg (for egg wash)
- 1 tablespoon coarse sugar (for topping)
- In a large bowl, mix flour and salt. Cut in butter until mixture resembles coarse crumbs.
- Gradually add ice water, 1 tablespoon at a time, until dough comes together.
- Divide dough into two disks, wrap in plastic, and chill for 1 hour.
- Preheat oven to 375°F (190°C).
- Roll out one dough disk for the bottom crust and place in a 9-inch pie dish.
- In a bowl, mix cherries, sugar, cornstarch, lemon juice, and almond extract. Pour into crust.
- Roll out the second dough disk and cut into strips for the lattice top.
- Weave strips over the filling, trim edges, and crimp.
- Brush lattice with egg wash and sprinkle with coarse sugar.
- Bake for 45-50 minutes until golden and bubbly. Cool before serving.
