Ingredients

  • 1 lb chicken breast, diced
  • 1 cup white rice
  • 4 cups chicken broth
  • 2 cups water
  • 1 onion, chopped
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 2 garlic cloves, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp olive oil
  • 1 bay leaf

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onions, carrots, and celery. Cook for 5 minutes.
  3. Add garlic and cook for 1 minute.
  4. Add chicken, salt, and pepper. Cook until chicken is no longer pink.
  5. Pour in chicken broth and water. Add the bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  7. Add rice and cook for 15 minutes or until rice is tender.
  8. Remove bay leaf before serving.

Notes

  • Use leftover cooked chicken for a quicker version.
  • Adjust salt and pepper to taste.
  • Add more water if the soup thickens too much.
