- 1 lb chicken breast, diced
- 1 cup white rice
- 4 cups chicken broth
- 2 cups water
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 garlic cloves, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
- 1 bay leaf
- Heat olive oil in a large pot over medium heat.
- Add onions, carrots, and celery. Cook for 5 minutes.
- Add garlic and cook for 1 minute.
- Add chicken, salt, and pepper. Cook until chicken is no longer pink.
- Pour in chicken broth and water. Add the bay leaf.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add rice and cook for 15 minutes or until rice is tender.
- Remove bay leaf before serving.
Notes
- Use leftover cooked chicken for a quicker version.
- Adjust salt and pepper to taste.
- Add more water if the soup thickens too much.
