  • 1 lb boneless, skinless chicken breasts, sliced into strips
  • 2 bell peppers, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tbsp fajita seasoning
  • 1 cup cooked rice
  • 1/2 cup shredded cheese
  • 1/4 cup chopped cilantro
  • 1 lime, cut into wedges

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add chicken and cook for 5-6 minutes until browned.
  3. Add bell peppers and onion to the skillet.
  4. Sprinkle fajita seasoning over the chicken and vegetables.
  5. Cook for another 5 minutes until vegetables are tender.
  6. Serve over cooked rice.
  7. Top with cheese, cilantro, and a squeeze of lime.
