- 2 lbs beef chuck, cubed
- 2 tbsp olive oil
- 1 onion, diced
- 3 garlic cloves, minced
- 2 chipotle peppers in adobo, chopped
- 1 tbsp adobo sauce
- 4 cups beef broth
- 2 carrots, sliced
- 2 potatoes, cubed
- 1 tsp cumin
- 1 tsp oregano
- Salt and pepper to taste
- Heat olive oil in a large pot over medium-high heat.
- Brown the beef cubes on all sides, then remove from pot.
- Sauté onion and garlic until softened.
- Add chipotle peppers, adobo sauce, cumin, and oregano. Stir for 1 minute.
- Return beef to pot and add beef broth. Bring to a boil.
- Reduce heat to low, cover, and simmer for 1.5 hours.
- Add carrots and potatoes. Cook for 30 more minutes until vegetables are tender.
- Season with salt and pepper before serving.
Notes
- Adjust chipotle quantity for preferred spice level
- Can be made in slow cooker: brown meat first, then cook on low for 6-8 hours
- Tastes even better the next day
