- 1/2 cup unsweetened cocoa powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup unsalted butter, softened
- 2/3 cup granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 24 soft caramel candies
- 1/2 cup chopped pecans
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Whisk flour, cocoa powder, baking soda, and salt in a bowl.
- Cream butter and sugar until fluffy. Beat in egg and vanilla.
- Gradually mix dry ingredients into the wet mixture.
- Roll dough into 1-inch balls and place on the baking sheet.
- Bake for 10-12 minutes. Press a caramel candy into the center of each cookie while warm.
- Sprinkle pecans on top and let cool.
