Ingredients

  • 1 cup almond flour
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup raspberry jam
  • Powdered sugar for dusting

Instructions

  1. Whisk flour, almond flour, cinnamon, and salt in a bowl.
  2. Cream butter and sugar until fluffy. Add egg and vanilla.
  3. Mix dry ingredients into wet until dough forms.
  4. Divide dough in half, wrap in plastic, and chill for 1 hour.
  5. Roll dough to 1/4-inch thickness and cut into shapes.
  6. Cut small centers from half the cookies.
  7. Bake at 350°F for 10-12 minutes until edges are golden.
  8. Cool completely, then spread jam on solid cookies.
  9. Top with cut-out cookies and dust with powdered sugar.
