Cilantro Lime Rice

A refreshing and zesty side dish perfect for pairing with Mexican or Tex-Mex meals.

Ingredients

  • 1 cup long-grain white rice
  • 2 cups water
  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 1 lime, juiced and zested
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. Heat olive oil in a saucepan over medium heat. Add garlic and sauté for 30 seconds.
  3. Add rice and stir to coat with oil. Cook for 1 minute.
  4. Pour in water and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
  5. Remove from heat and let sit, covered, for 5 minutes.
  6. Fluff rice with a fork. Stir in lime juice, lime zest, cilantro, and salt.

Notes

  • For extra flavor, use chicken or vegetable broth instead of water.
  • Adjust lime and cilantro to taste.
  • Best served fresh but can be stored in the fridge for up to 3 days.
