- 1 cup long-grain white rice
- 2 cups water
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 lime, juiced and zested
- 1/4 cup fresh cilantro, chopped
- 1/2 teaspoon salt
- Rinse the rice under cold water until the water runs clear.
- Heat olive oil in a saucepan over medium heat. Add garlic and sauté for 30 seconds.
- Add rice and stir to coat with oil. Cook for 1 minute.
- Pour in water and bring to a boil. Reduce heat, cover, and simmer for 15 minutes.
- Remove from heat and let sit, covered, for 5 minutes.
- Fluff rice with a fork. Stir in lime juice, lime zest, cilantro, and salt.
Notes
- For extra flavor, use chicken or vegetable broth instead of water.
- Adjust lime and cilantro to taste.
- Best served fresh but can be stored in the fridge for up to 3 days.
