A classic double-crust apple pie with a flaky crust and sweet, spiced apple filling.

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 tsp salt
  • 1 cup unsalted butter, chilled and diced
  • 68 tbsp ice water
  • 67 medium apples, peeled and sliced
  • 3/4 cup granulated sugar
  • 2 tbsp lemon juice
  • 1 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 2 tbsp unsalted butter, diced
  • 1 egg, beaten (for egg wash)

Instructions

  1. Mix flour and salt in a bowl. Cut in butter until crumbs form.
  2. Add ice water 1 tbsp at a time until dough comes together.
  3. Divide dough into two disks, wrap in plastic, and chill for 1 hour.
  4. Preheat oven to 375°F (190°C).
  5. Roll out one dough disk into a 12-inch circle and place in a pie dish.
  6. Toss apples with sugar, lemon juice, cinnamon, nutmeg, and salt. Fill the pie crust.
  7. Dot with butter.
  8. Roll out the second dough disk and place over the filling. Seal edges and cut slits on top.
  9. Brush with egg wash.
  10. Bake for 50-60 minutes until golden brown.

Notes

  • Use a mix of tart and sweet apples for balanced flavor.
  • Chill dough before rolling for easier handling.
  • Let pie cool before slicing to set the filling.
