- 4 cups whole milk
- 1 cup heavy cream
- 6 large egg yolks
- 1/2 cup granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cinnamon
- 1/8 teaspoon ground cloves
- Combine milk, cream, nutmeg, cinnamon, and cloves in a saucepan. Heat until steaming but not boiling.
- Whisk egg yolks, sugar, and salt in a bowl until pale.
- Slowly pour the warm milk mixture into the egg mixture while whisking constantly.
- Return the mixture to the saucepan. Cook over low heat, stirring constantly, until it thickens slightly.
- Remove from heat. Stir in vanilla extract.
- Strain through a fine-mesh sieve into a clean container. Serve warm.
