- 2 cups fresh cranberries
- 1 cup granulated sugar
- 1 cup whole milk
- 1 cup heavy cream
- 4 large egg yolks
- 1 tsp vanilla extract
- In a saucepan, combine cranberries and 1/2 cup sugar. Cook over medium heat until cranberries burst.
- Blend the mixture until smooth and strain to remove skins.
- In another saucepan, heat milk and cream until just simmering.
- Whisk egg yolks with remaining sugar, then slowly add hot milk mixture while stirring.
- Return to heat and cook until thickened. Remove from heat and stir in vanilla.
- Mix in cranberry puree, then chill for at least 4 hours.
- Churn in an ice cream maker according to manufacturer’s instructions.
- Freeze until firm before serving.
Notes
- For a smoother texture, strain the cranberry puree twice.
- Adjust sugar based on cranberry tartness.
- Chill the mixture thoroughly for best results.
