- 1 cup granulated sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup orange juice
- 1 tbsp orange zest
- 1 cup fresh cranberries
- 1/2 cup chopped walnuts (optional)
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In another bowl, cream butter and sugar until light and fluffy. Beat in eggs one at a time.
- Mix in orange juice and zest. Gradually add the dry ingredients to the wet mixture.
- Fold in cranberries and walnuts. Pour batter into the prepared pan.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Cool in pan for 10 minutes, then transfer to a wire rack to cool completely.
