- 4 cups fresh or frozen cranberries
- 1 cup granulated sugar
- 1 cup water
- 1 tbsp lemon juice
- 1 tsp lemon zest
- Combine cranberries, sugar, and water in a saucepan.
- Bring to a boil, then reduce heat and simmer for 10 minutes.
- Remove from heat and stir in lemon juice and zest.
- Cool slightly, then blend until smooth.
- Strain through a fine-mesh sieve to remove any solids.
- Pour into a shallow dish and freeze for 4-6 hours.
- Stir every hour to break up ice crystals.
- Serve chilled in bowls or glasses.
Notes
- Adjust sugar to taste if cranberries are very tart.
- For a smoother texture, blend again before freezing.
- Garnish with fresh mint or a lemon slice if desired.
