These cranberry white chocolate scones are a perfect blend of tart and sweet. They are easy to make and ideal for breakfast or a snack.

  • 1/4 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup dried cranberries
  • 1/2 cup white chocolate chips
  • 1/2 cup heavy cream
  • 1 large egg
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  4. Stir in the cranberries and white chocolate chips.
  5. In a separate bowl, mix the heavy cream, egg, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and stir until just combined.
  7. Turn the dough onto a floured surface and shape it into a 1-inch thick circle.
  8. Cut the dough into 8 wedges and place them on the prepared baking sheet.
  9. Bake for 15-18 minutes or until golden brown.
  10. Let cool slightly before serving.

Notes

  • For best results, use cold butter.
  • Do not overmix the dough to keep the scones tender.
