- 4 cups water
- 1 tsp salt
- 2 tbsp butter
- 1/2 cup grated Parmesan cheese
- 2 cups wild mushrooms (sliced)
- 2 tbsp olive oil
- 2 cloves garlic (minced)
- 1 tbsp fresh thyme
- Black pepper to taste
- Bring water to a boil in a pot. Add salt.
- Slowly whisk in polenta. Reduce heat to low.
- Cook for 20 minutes, stirring occasionally, until thickened.
- Stir in butter and Parmesan cheese. Cover and set aside.
- Heat olive oil in a pan over medium heat.
- Add mushrooms and sauté for 5 minutes.
- Add garlic and thyme. Cook for another 2 minutes.
- Season with black pepper.
- Serve polenta topped with mushrooms.
