Ingredients

  • 4 cups water
  • 1 tsp salt
  • 2 tbsp butter
  • 1/2 cup grated Parmesan cheese
  • 2 cups wild mushrooms (sliced)
  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1 tbsp fresh thyme
  • Black pepper to taste

Instructions

  1. Bring water to a boil in a pot. Add salt.
  2. Slowly whisk in polenta. Reduce heat to low.
  3. Cook for 20 minutes, stirring occasionally, until thickened.
  4. Stir in butter and Parmesan cheese. Cover and set aside.
  5. Heat olive oil in a pan over medium heat.
  6. Add mushrooms and sauté for 5 minutes.
  7. Add garlic and thyme. Cook for another 2 minutes.
  8. Season with black pepper.
  9. Serve polenta topped with mushrooms.
