Creamy scalloped potatoes are a rich and comforting side dish made with thinly sliced potatoes baked in a creamy sauce.

Ingredients

  • 2 lbs potatoes, thinly sliced
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp dried thyme
  • 1 cup shredded cheddar cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a saucepan, heat cream, milk, garlic, salt, pepper, and thyme until warm.
  3. Layer half the potatoes in a greased baking dish.
  4. Pour half the cream mixture over the potatoes.
  5. Repeat with remaining potatoes and cream mixture.
  6. Sprinkle cheddar and Parmesan cheese on top.
  7. Cover with foil and bake for 45 minutes.
  8. Uncover and bake for another 15-20 minutes until golden and bubbly.
  9. Let rest 5 minutes before serving.

Notes

  • Use a mandoline for even potato slices.
  • Letting it rest ensures the sauce thickens.
  • Add cooked bacon for extra flavor.
