- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 cup heavy cream
- 1/2 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1/2 cup grated parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Heat olive oil in a large skillet over medium-high heat.
- Season chicken with salt and pepper, then cook until browned and fully cooked (5-7 minutes per side). Remove and set aside.
- In the same skillet, sauté garlic until fragrant (about 30 seconds).
- Add sun-dried tomatoes, spinach, and Italian seasoning. Cook until spinach wilts (1-2 minutes).
- Pour in heavy cream and stir in parmesan cheese. Simmer for 2-3 minutes until slightly thickened.
- Return chicken to the skillet, coating it with the sauce. Serve hot.
