Crispy baked chicken taquitos filled with seasoned shredded chicken and cheese. A perfect appetizer or main dish.

Ingredients

  • 2 cups shredded cooked chicken
  • 1 cup shredded cheddar cheese
  • 1/2 cup salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 10 small flour tortillas
  • 1 tbsp olive oil

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, mix shredded chicken, cheese, salsa, cumin, chili powder, garlic powder, and onion powder.
  3. Warm tortillas slightly to make them pliable.
  4. Spoon 2-3 tbsp of filling onto each tortilla and roll tightly.
  5. Place taquitos seam-side down on a baking sheet.
  6. Brush with olive oil.
  7. Bake for 15-20 minutes until golden and crispy.
  8. Serve with sour cream or guacamole.

  • Use corn tortillas for a gluten-free option.
  • Add diced jalapeños for extra spice.
  • Store leftovers in an airtight container for up to 3 days.
