A simple and nutritious salad featuring crispy chickpeas for added crunch.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp salt
  • 4 cups mixed greens
  • 1 cucumber, diced
  • 1 red bell pepper, sliced
  • 1/4 cup red onion, thinly sliced
  • 2 tbsp lemon juice
  • 1 tbsp tahini

Instructions

  1. Preheat oven to 400°F.
  2. Toss chickpeas with olive oil, paprika, and salt.
  3. Spread chickpeas on a baking sheet and roast for 20 minutes.
  4. In a large bowl, combine mixed greens, cucumber, bell pepper, and red onion.
  5. Whisk lemon juice and tahini together for the dressing.
  6. Toss salad with dressing and top with crispy chickpeas.
