4 large potatoes, peeled and grated
1 small onion, grated
2 large eggs, beaten
3 tablespoons all-purpose flour
1 teaspoon salt

Instructions
Grate the potatoes and onion, then squeeze out excess moisture using a clean kitchen towel.
In a large bowl, combine the grated potatoes, onion, eggs, flour, salt, and pepper.
Heat vegetable oil in a skillet over medium heat.
Drop spoonfuls of the potato mixture into the hot oil, flattening them with a spatula.
Fry until golden brown on both sides, about 3-4 minutes per side.
