  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • 2 tablespoons grated Parmesan cheese
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil for frying

Instructions

  1. Grate the zucchini and mix with salt. Let sit for 10 minutes, then squeeze out excess moisture.
  2. In a bowl, combine zucchini, flour, egg, Parmesan, garlic, and black pepper.
  3. Heat olive oil in a pan over medium heat.
  4. Drop spoonfuls of the mixture into the pan and flatten slightly.
  5. Cook for 3-4 minutes per side until golden brown.
  6. Drain on paper towels and serve warm.
