A creamy and comforting soup made with broccoli, cheddar cheese, and potatoes, slow-cooked to perfection in a crock pot.

  • 4 cups peeled and diced potatoes
  • 2 cups chopped broccoli florets
  • 1 small onion, diced
  • 3 cups chicken or vegetable broth
  • 1 cup heavy cream
  • 2 cups shredded cheddar cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  1. Add potatoes, broccoli, onion, and broth to the crock pot.
  2. Cover and cook on low for 6 hours or high for 3 hours.
  3. Stir in heavy cream, cheddar cheese, garlic powder, salt, and pepper.
  4. Cover and cook for an additional 30 minutes until cheese is melted.
  5. Blend partially for a creamier texture if desired.
  6. Serve hot.
