A delicious and easy-to-make breakfast casserole using ripe bananas and French toast cooked in a crockpot.

Ingredients

  • 6 cups cubed French bread
  • 3 ripe bananas, sliced
  • 4 large eggs
  • 1 1/2 cups milk
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 tbsp butter (for greasing)

Instructions

  1. Grease the crockpot with butter.
  2. Layer half the bread cubes and banana slices in the crockpot.
  3. Repeat with remaining bread and bananas.
  4. Whisk eggs, milk, maple syrup, vanilla, cinnamon, and nutmeg in a bowl.
  5. Pour mixture evenly over bread and bananas.
  6. Cover and cook on low for 3-4 hours.
  7. Serve warm with extra syrup if desired.

Notes

  • Best made with day-old bread.
  • Add nuts or chocolate chips for extra flavor.
  • Refrigerate leftovers for up to 2 days.
