- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 1 (28 oz) can crushed tomatoes
- 4 cups chicken broth
- 1 (6 oz) can tomato paste
- 2 tsp Italian seasoning
- 1 tsp salt
- 1/2 tsp black pepper
- 8 oz lasagna noodles, broken into pieces
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 2 tbsp grated Parmesan cheese
- Fresh basil for garnish (optional)
- Brown the ground beef in a skillet over medium heat. Drain excess fat.
- Add the diced onion and minced garlic. Cook for 2-3 minutes.
- Transfer the beef mixture to the crockpot.
- Add crushed tomatoes, chicken broth, tomato paste, Italian seasoning, salt, and black pepper. Stir well.
- Cover and cook on low for 6 hours or high for 3 hours.
- Add broken lasagna noodles. Cook for an additional 30-40 minutes until noodles are tender.
- Stir in ricotta cheese, mozzarella, and Parmesan.
- Serve hot, garnished with fresh basil if desired.
Notes
- You can use ground turkey instead of beef.
- Add more broth if you prefer a thinner soup.
- Store leftovers in an airtight container for up to 3 days.
