- 6 cups peeled and diced potatoes
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 6 slices cooked bacon, crumbled
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp dried thyme
- Combine potatoes, onion, garlic, broth, salt, pepper, and thyme in the crockpot.

- Use a potato masher to break down some of the potatoes for a thicker texture.
