- 1 (15 oz) can pumpkin puree
- 1 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 tsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp salt
- 4 oz cream cheese, softened
- 2 tbsp butter, softened
- 1 cup powdered sugar
- 1/2 tsp vanilla extract
- Grease the crockpot insert with cooking spray.
- In a bowl, mix pumpkin puree, granulated sugar, oil, eggs, and vanilla.
- Sift flour, baking powder, baking soda, cinnamon, nutmeg, and salt into the wet mixture. Stir until combined.
- Pour batter into the crockpot and spread evenly.
- Cover and cook on high for 1.5-2 hours or until a toothpick inserted comes out clean.
- Let cool completely.
- Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
- Spread frosting over cooled bars.
- Slice and serve.
