Delicious pumpkin bars made easily in a crockpot, topped with creamy cream cheese frosting for the perfect fall treat.

  • 1 (15 oz) can pumpkin puree
  • 1 cup granulated sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/4 tsp salt
  • 4 oz cream cheese, softened
  • 2 tbsp butter, softened
  • 1 cup powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Grease the crockpot insert with cooking spray.
  2. In a bowl, mix pumpkin puree, granulated sugar, oil, eggs, and vanilla.
  3. Sift flour, baking powder, baking soda, cinnamon, nutmeg, and salt into the wet mixture. Stir until combined.
  4. Pour batter into the crockpot and spread evenly.
  5. Cover and cook on high for 1.5-2 hours or until a toothpick inserted comes out clean.
  6. Let cool completely.
  7. Beat cream cheese, butter, powdered sugar, and vanilla until smooth.
  8. Spread frosting over cooled bars.
  9. Slice and serve.

  • Store leftovers in the refrigerator.
  • For extra spice, add 1/4 tsp ground cloves.
