A flavorful and easy-to-make chicken fajita bowl with fresh vegetables and spices.

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 onion, sliced
  • 2 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked rice
  • 1/2 cup shredded cheese
  • 1/4 cup sour cream

Instructions

  1. Heat olive oil in a skillet over medium-high heat.
  2. Add chicken breasts and cook for 6-7 minutes per side until fully cooked.
  3. Remove chicken and slice into strips.
  4. In the same skillet, add bell peppers and onion. Cook for 5-6 minutes until softened.
  5. Add chili powder, cumin, garlic powder, salt, and black pepper to the vegetables.
  6. Return chicken to the skillet and stir to combine.
  7. Assemble bowls with rice, chicken fajita mixture, shredded cheese, and sour cream.
