- 2 boneless, skinless chicken breasts
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 cup cooked rice
- 1/2 cup shredded cheese
- 1/4 cup sour cream
- Heat olive oil in a skillet over medium-high heat.
- Add chicken breasts and cook for 6-7 minutes per side until fully cooked.
- Remove chicken and slice into strips.
- In the same skillet, add bell peppers and onion. Cook for 5-6 minutes until softened.
- Add chili powder, cumin, garlic powder, salt, and black pepper to the vegetables.
- Return chicken to the skillet and stir to combine.
- Assemble bowls with rice, chicken fajita mixture, shredded cheese, and sour cream.
