Delicious low-carb brownie bites perfect for a keto diet.

Ingredients

  • 1 cup almond flour
  • 1/4 cup cocoa powder
  • 1/2 cup erythritol or preferred keto sweetener
  • 1/4 cup melted butter or coconut oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1/2 tsp baking powder
  • 1/4 cup sugar-free chocolate chips (optional)

Instructions

  1. Preheat oven to 350°F (175°C) and grease a mini muffin tin.
  2. Mix almond flour, cocoa powder, sweetener, salt, and baking powder in a bowl.
  3. Add melted butter, eggs, and vanilla extract. Stir until smooth.
  4. Fold in chocolate chips if using.
  5. Spoon batter into muffin tin, filling each cup 3/4 full.
  6. Bake for 12-15 minutes or until a toothpick comes out clean.
  7. Let cool before serving.

Notes

  • Store in an airtight container for up to 5 days.
  • For fudgier texture, slightly underbake.
