Ingredients

  • 1 cup cooked rice
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels
  • 1/2 cup diced tomatoes
  • 1/4 cup diced red onion
  • 1/4 cup chopped cilantro
  • 1 avocado, sliced
  • 1 lime, juiced
  • 1 tbsp olive oil
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook rice according to package instructions.
  2. Heat olive oil in a pan over medium heat.
  3. Add black beans, corn, tomatoes, and red onion. Sauté for 3-5 minutes.
  4. Stir in cumin, chili powder, salt, and pepper.
  5. Divide rice into bowls and top with the bean mixture.
