Easy slice-and-bake vanilla bean cookies with rich flavor and crisp texture.

Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 1 vanilla bean, seeds scraped (or 2 tsp vanilla extract)
  • 2 1/4 cups all-purpose flour
  • 1/4 tsp salt

Instructions

  1. Cream butter and sugar until light and fluffy.
  2. Add vanilla bean seeds (or extract) and mix well.
  3. Gradually add flour and salt, mixing until combined.
  4. Shape dough into a log, wrap in plastic, and chill for 2 hours.
  5. Preheat oven to 350°F (175°C).
  6. Slice dough into 1/4-inch rounds and place on baking sheets.
  7. Bake for 12-15 minutes until edges are golden.
  8. Cool on wire racks before serving.

Notes

  • Dough can be frozen for up to 3 months.
