- 6 egg yolks
- 3/4 cup white sugar
- 2/3 cup milk
- 1 1/4 cups heavy cream
- 1/2 teaspoon vanilla extract
- 1 pound mascarpone cheese
- 1/4 cup strong brewed coffee, room temperature
- 2 tablespoons rum
- 24 ladyfinger cookies
- 1 tablespoon unsweetened cocoa powder
- Whisk egg yolks and sugar in a heatproof bowl.
- Place the bowl over a pot of simmering water and whisk until thick.
- Remove from heat and let cool.
- Beat heavy cream and vanilla until stiff peaks form.
- Fold mascarpone into the egg mixture, then gently fold in the whipped cream.
- Mix coffee and rum in a shallow dish.
- Quickly dip each ladyfinger into the coffee mixture and layer them in a dish.
- Spread half the mascarpone mixture over the ladyfingers.
- Repeat the layers and dust the top with cocoa powder.
- Chill for at least 4 hours before serving.
