  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/2 cup crumbled cotija cheese
  • 1 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1 lime, juiced
  • 1/4 cup chopped cilantro
  • Salt to taste

Instructions

  1. Preheat grill to medium-high heat.
  2. Grill corn for 10 minutes, turning occasionally, until lightly charred.
  3. Let corn cool slightly, then cut kernels off the cob.
  4. In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, and smoked paprika.
