4 cups cooked shredded chicken
12 corn tortillas
2 cups green salsa (salsa verde)
1 cup heavy cream
1 cup shredded Swiss cheese
1/2 cup sour cream
1/4 cup chopped cilantro
2 tbsp vegetable oil
Salt to taste
Instructions
Preheat your oven to 375°F (190°C).
Heat the vegetable oil in a skillet over medium heat. Lightly fry each tortilla for about 10 seconds on each side to soften them. Drain on paper towels.
Fill each tortilla with shredded chicken and roll it up. Place the rolled tortillas seam-side down in a baking dish.
In a bowl, mix the green salsa and heavy cream. Pour this mixture over the rolled tortillas.
Sprinkle the shredded Swiss cheese evenly over the top.
Bake in the preheated oven for 20 minutes, or until the cheese is melted and bubbly.
Remove from the oven and let cool for 5 minutes. Garnish with sour cream and chopped cilantro before serving.
Notes
You can use store-bought green salsa or make your own for a fresher taste.
For a spicier version, add chopped jalapeños to the filling.
Serve with a side of rice and beans for a complete meal.
