Fluffy pumpkin pancakes topped with maple syrup for a delicious breakfast treat.

Ingredients

  • 1 cup all-purpose flour
  • 1 tbsp sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp pumpkin pie spice
  • 3/4 cup milk
  • 1/2 cup pumpkin puree
  • 1 egg
  • 2 tbsp melted butter

Instructions

  1. Whisk dry ingredients in a bowl.
  2. Mix milk, pumpkin puree, egg, and melted butter in another bowl.
  3. Combine wet and dry ingredients until just mixed.
  4. Heat a pan over medium heat and lightly grease it.
  5. Pour 1/4 cup batter per pancake and cook until bubbles form.
  6. Flip and cook the other side until golden brown.
  7. Serve warm with maple syrup.

Notes

  • Do not overmix the batter for fluffier pancakes.
  • Adjust sweetness by adding more or less sugar.
  • Use fresh pumpkin puree for best results.
