Fluffy gluten-free pumpkin pancakes made with simple ingredients. Perfect for breakfast or brunch.

Ingredients

  • 1 tbsp baking powder
  • 1 tsp pumpkin pie spice
  • 1/4 tsp salt
  • 1 cup milk
  • 1/2 cup pumpkin puree
  • 1 egg
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract
  • 1 tbsp melted butter or oil

Instructions

  1. Whisk dry ingredients in a bowl.
  2. Mix wet ingredients in another bowl.
  3. Combine wet and dry ingredients. Stir until just mixed.
  4. Heat a pan over medium heat. Lightly grease.
  5. Pour 1/4 cup batter per pancake. Cook until bubbles form.
  6. Flip and cook until golden brown.
  7. Serve with maple syrup or toppings of your choice.
